This Pull-Apart Cinnamon Roll Focaccia combines the airy, bubbled texture of focaccia with the sweet, warming flavors of classic cinnamon rolls, making it a perfect dessert or breakfast treat.

- 150 grams bubbly sourdough starter
- 25 grams olive oil
- 360 grams filtered water
- 600 grams all-purpose flour
- 10 grams salt
- 1 stick butter
- melted
- 1–2 cups granulated sugar
- 1 tbsp ground cinnamon
Instructions
- In a large bowl, mix together the sourdough starter, olive oil, and filtered water until well combined.
- Gradually add the all-purpose flour and salt, mixing until a sticky dough forms.
- Cover the bowl with a damp cloth and let it rest for 4-6 hours or until doubled in size.
- Once the dough has risen, preheat your oven to 375°F (190°C).
- On a floured surface, flatten the dough into a rectangle, brush with melted butter, and sprinkle with granulated sugar and ground cinnamon.
- Roll the dough tightly and slice into equal pieces.
- Place the slices into a greased baking pan, allowing for some space between them.
- Cover again and let rise for another 30-45 minutes.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Let cool slightly before serving, drizzling with additional melted butter if desired.
Notes
For added sweetness, drizzle with icing made from powdered sugar and milk after baking.
