Description

This Pumpkin Baked Oatmeal is a warm, comforting dish that combines the flavors of pumpkin and spices, perfect for breakfast or a cozy dessert.


Ingredients

  • avocado oil or neutral oil for greasing
  • 2 cups rolled oats
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • 2 teaspoons vanilla
  • ⅓ cup maple syrup or honey
  • chocolate chips nuts raisins or topping of choice optional

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish with avocado oil or neutral oil.
  2. In a large bowl, mix the rolled oats, pumpkin spice, baking powder, and salt.
  3. In another bowl, combine the pumpkin puree, milk, eggs, vanilla, and maple syrup or honey, and whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in chocolate chips, nuts, or raisins.
  5. Spread the mixture evenly in the prepared baking dish and bake in the preheated oven for 30-35 minutes or until set and golden on top.
  6. Allow to cool for a few minutes before slicing and serving.

Notes

For a dairy-free version, substitute regular milk with almond milk. To make it egg-free, use flax eggs instead.
