- 1 ½ cups (170 g) graham cracker crumbs
- 2 Tablespoons granulated sugar
- 1 Tablespoon brown sugar

- ¾ cup (150 g) granulated sugar
- ¼ cup (50 g) light brown sugar
- firmly packed
- ½ cup (113 g) sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- lightly beaten
- ⅔ cup (168 g) canned pumpkin
- 1 ½ teaspoons pumpkin spice
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×13 inch baking dish.
- In a bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter. Mix until well combined and press firmly into the bottom of the prepared baking dish.
- In a separate bowl, beat the cream cheese until smooth. Gradually add granulated sugar and brown sugar, mixing until combined.
- Blend in sour cream and vanilla extract, then add the eggs, incorporating one at a time.
- Divide the batter in half. Mix the canned pumpkin and pumpkin spice into one half. Pour the plain cheesecake batter over the crust, followed by the pumpkin cheesecake batter.
- Gently swirl the two batters together using a knife or a skewer.
- Bake in the preheated oven for 30-35 minutes or until the center is set and the edges are lightly browned.
- Allow to cool, then refrigerate for at least 2 hours before slicing into bars.
Notes
For the best texture, ensure cream cheese is softened. Add whipped cream on top for serving if desired.
