  • 2 Tablespoons granulated sugar
  • 1 Tablespoon brown sugar

  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) light brown sugar
  • firmly packed
  • ½ cup (113 g) sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • lightly beaten
  • ⅔ cup (168 g) canned pumpkin
  • 1 ½ teaspoons pumpkin spice

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×13 inch baking dish.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, brown sugar, and melted butter. Mix until well combined and press firmly into the bottom of the prepared baking dish.
  3. In a separate bowl, beat the cream cheese until smooth. Gradually add granulated sugar and brown sugar, mixing until combined.
  4. Blend in sour cream and vanilla extract, then add the eggs, incorporating one at a time.
  5. Divide the batter in half. Mix the canned pumpkin and pumpkin spice into one half. Pour the plain cheesecake batter over the crust, followed by the pumpkin cheesecake batter.
  6. Gently swirl the two batters together using a knife or a skewer.
  7. Bake in the preheated oven for 30-35 minutes or until the center is set and the edges are lightly browned.
  8. Allow to cool, then refrigerate for at least 2 hours before slicing into bars.

Notes

For the best texture, ensure cream cheese is softened. Add whipped cream on top for serving if desired.
