- 1 can 15 oz pumpkin puree (not pumpkin pie mix)
- 3/4 cup heavy cream
- 2 large eggs

- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- 8 oz cream cheese (softened)
- 1 large egg
- 1 egg yolk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, mix graham cracker crumbs, 6 tablespoons sugar, and melted butter until combined. Press this mixture firmly into the bottom of the prepared pan.
- In another bowl, whisk together the pumpkin puree, heavy cream, 2 eggs, 3/4 cup sugar, vanilla extract, and pumpkin pie spice until smooth.
- Pour the pumpkin mixture over the crust.
- In a separate bowl, beat the softened cream cheese, 1 egg, egg yolk, 1/2 cup sugar, and 1 teaspoon vanilla extract until creamy.
- Dollop the cheesecake mixture over the pumpkin layer and use a knife to swirl it lightly.
- Bake for 30 minutes or until set and slightly puffed.
- Let cool completely before slicing into bars.
Notes
For extra flavor, consider adding chopped nuts on top of the cheesecake layer before baking.
