- 3 very ripe bananas
- mashed
- approx. 1 1/2 cup
- 1 large egg
- room temp is best
- 2/3 c pumpkin
- 1 1/2 c flour
- 5 T butter
- melted and then cooled
- 1/3 c brown sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 c chocolate chips (I used dark chocolate)
- ½ – 1 tsp pumpkin pie spice
- optional
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas, pumpkin, and melted butter until well combined.
- Add the egg, brown sugar, vanilla extract, baking soda, baking powder, sea salt, and pumpkin pie spice, if using. Mix until thoroughly combined.
- Gradually add the flour, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a touch of spice, feel free to increase the pumpkin pie spice as per your preference. This bread is best enjoyed fresh, but can also be stored in an airtight container for up to 3 days.
