Instructions

- In a separate bowl, mix the flour, baking powder, cinnamon, and any desired mix-ins.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing to keep the pancakes fluffy.
- Heat a non-stick skillet or griddle over medium heat. Pour about ¼ cup of batter onto the skillet for each pancake.
