- 1/2 cup Unsalted butter
- melted and cooled
- 3/4 cup Brown sugar

- 1 Large egg

- 1 tsp Pure vanilla extract
- 1/4 cup Sour cream
- room temperature
- 1/2 cup Buttermilk
- room temperature
- Coarse sugar

- 4 oz Cream cheese
- room temperature
- 2 TBSP White granulated sugar
- 1 tsp All-purpose flour
- 1 tsp Milk
- 1 tsp Pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice, and nutmeg.
- In another bowl, combine the pumpkin puree, melted butter, brown sugar, egg, vanilla extract, sour cream, and buttermilk until well blended.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a small bowl, mix the cream cheese, white sugar, flour, milk, and vanilla extract until smooth to create the cream cheese filling.
- Scoop a tablespoon of muffin batter into each muffin liner, followed by a dollop of cream cheese filling, then top with more batter until the liners are about 3/4 full.
- Sprinkle coarse sugar on top of each muffin for added sweetness and texture.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, consider adding chopped nuts or chocolate chips to the muffin batter.
