Ingredients

  • 15 oz Pumpkin puree
  • 1/2 cup Unsalted butter
  • melted and cooled
  • 3/4 cup Brown sugar
  • packed light or dark
  • 1 Large egg
  • room temperature
  • 1 tsp Pure vanilla extract
  • 1/4 cup Sour cream
  • room temperature
  • 1/2 cup Buttermilk
  • room temperature
  • Coarse sugar
  • like sugar in the raw
  • 4 oz Cream cheese
  • room temperature
  • 2 TBSP White granulated sugar
  • 1 tsp All-purpose flour
  • 1 tsp Milk
  • 1 tsp Pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice, and nutmeg.
  3. In another bowl, combine the pumpkin puree, melted butter, brown sugar, egg, vanilla extract, sour cream, and buttermilk until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. In a small bowl, mix the cream cheese, white sugar, flour, milk, and vanilla extract until smooth to create the cream cheese filling.
  6. Scoop a tablespoon of muffin batter into each muffin liner, followed by a dollop of cream cheese filling, then top with more batter until the liners are about 3/4 full.
  7. Sprinkle coarse sugar on top of each muffin for added sweetness and texture.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
  9. Let muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, consider adding chopped nuts or chocolate chips to the muffin batter.
