- 1 loaf french bread
- slightly stale
- 2–4 Tbsp. butter
- 4 eggs
- 2/3 cups milk
- 1/2 cup pumpkin puree
- 1/2 Tbsp. vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice*
- 1/2 cup sugar
- 1 Tbsp. cinnamon
Instructions
- Cut the slightly stale French bread into 1-inch slices if necessary, or dry fresh slices in the oven at 275°F for 8 minutes.
- In a large bowl, whisk together the eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice until well combined.
- Melt 2 tablespoons of butter in a skillet over medium heat.
- Dip each slice of bread into the egg mixture, allowing it to soak briefly on each side.
- Place the soaked slices in the skillet and cook until golden brown, about 3-4 minutes per side.
- In a small bowl, combine the sugar and cinnamon for the coating.
- Once cooked, remove the French toast sticks from the skillet, and roll them in the cinnamon sugar mixture while still warm.
- Serve with maple syrup or your favorite dipping sauce.

Feel free to adjust the pumpkin spice and cinnamon sugar ratios to suit your taste. Serve immediately for the best texture.
