  • 12 slices Texas toast
  • 1/2 cup salted or unsalted butter
  • 1/3 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Instructions

  1. In a large bowl, whisk together the eggs, milk, pumpkin puree, vanilla extract, ground cinnamon, and pumpkin pie spice until well combined.
  2. Preheat a griddle or large skillet over medium heat and lightly grease with butter or cooking spray.
  3. Dip each slice of Texas toast into the pumpkin egg mixture, ensuring both sides are coated, and place them on the griddle.
  4. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  5. While the French toast cooks, prepare the whipped pumpkin butter by combining the softened butter, pumpkin puree, maple syrup, vanilla extract, cinnamon, and pumpkin pie spice in a bowl. Mix until smooth and creamy.
  6. Serve the cooked French toast warm, topped with a dollop of whipped pumpkin butter.
