Delight in the autumn flavors with this homemade Pumpkin Gnocchi, paired perfectly with sage butter for a comforting dish.
Ingredients

- 2 ⅔ cups pumpkin cubed
- ⅔ cups starchy potato cubed
- ½ tsp salt
- ¾ cup flour
- 2 tbsp vegan butter
- 2 tsp sage densely packed
Instructions
- Begin by steaming the pumpkin and potato cubes until tender, approximately 15 minutes.
- Mash the steamed pumpkin and potato together in a large bowl.
- Add the salt and flour to the mashed mixture, and knead until a dough forms.
- Divide the dough into small pieces and roll them into ropes; then cut them into small gnocchi pieces.
- Boil a pot of salted water and cook the gnocchi until they float, approximately 2-3 minutes.
- In a separate pan, melt the vegan butter and add the sage, sautéing until fragrant.
- Toss the cooked gnocchi in the sage butter and serve hot.
Notes
For extra flavor, feel free to sprinkle some grated vegan cheese on top before serving.
