Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, pumpkin spice, cinnamon, and salt.
- In another bowl, mix pumpkin puree, apple sauce, melted coconut oil, shredded apple, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients, mixing gently to combine.
- Fold in grated carrots, dried cranberries, flaked coconut, and chopped pecans.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
