- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar

- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 teaspoons pumpkin pie spice
- 2 large eggs
- 15 oz. can pumpkin puree
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and pumpkin pie spice.
- In another bowl, beat the eggs, then add pumpkin puree, vegetable oil, and vanilla extract; mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added flavor, consider adding chocolate chips or nuts to the batter before baking.
