  • Pinch of fine salt
  • ½ cup creamy almond butter
  • ⅓ cup canned pumpkin puree
  • 3 tablespoons pure maple syrup
  • 1 tablespoon coconut oil
  • melted
  • 1 teaspoon pure vanilla extract
  • ⅓ cup mini chocolate chips
  • 3 tablespoons roasted pumpkin seeds
  • roughly chopped

Instructions

  1. In a large mixing bowl, combine the old-fashioned rolled oats, protein powder, shredded coconut, ground flaxseed, pumpkin pie spice, ground cinnamon, and salt.
  2. Add the almond butter, pumpkin puree, maple syrup, melted coconut oil, and vanilla extract to the dry ingredients and mix until a sticky dough forms.
  3. Fold in the mini chocolate chips and chopped pumpkin seeds until evenly distributed.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  5. Refrigerate the protein balls for at least 30 minutes to firm up before serving.
