- 1 cup pumpkin puree
- ¾ cup full-fat plain Greek yogurt
- 2/3 cup maple syrup
- 2 large eggs
- 2 tablespoons avocado oil
- 1 ¾ cups oat flour
- ½ cup vanilla whey protein powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the pumpkin puree, Greek yogurt, maple syrup, eggs, and avocado oil until smooth.
- In another bowl, whisk together oat flour, vanilla whey protein powder, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added sweetness, consider adding chocolate chips or nuts. Store leftovers in an airtight container for up to 3 days.
