- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1/2 cup chicken broth low sodium preferred
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine pumpkin puree, chopped sage, garlic powder, onion powder, salt, and pepper, mixing until well blended.
- In a large oven-safe skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then place them in the skillet. Sear for 2-3 minutes on each side until golden.
- Pour the pumpkin mixture over the seared chicken breasts, then add chicken broth around the edges.
- Sprinkle shredded mozzarella cheese on top.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it sit for a few minutes before serving.
