Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1 tablespoon baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon fine sea salt
- 1/2 cup very cold salted butter diced or grated
- 3/4 cup pumpkin purée
- 1/3 cup buttermilk or milk plus extra for brushing
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar for glaze
- 2 to 3 teaspoons buttermilk or milk for glaze
- 1/2 teaspoon vanilla extract for glaze
- optional 1/4 teaspoon ground cinnamon ginger or cardamom for glaze
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt.
- Add the cold butter, using a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- In a separate bowl, combine the pumpkin purée, buttermilk, and vanilla extract, then stir this mixture into the dry ingredients until just combined.
- Turn the dough out onto a floured surface and gently knead it just until it comes together, then pat it into a circle about 1-inch thick.
- Cut the dough into wedges and place them on the prepared baking sheet, brushing the tops lightly with extra buttermilk.
- Bake for 20-25 minutes or until golden, then cool slightly on a wire rack.
- To prepare the glaze, whisk together the powdered sugar, buttermilk, and vanilla extract in a small bowl until smooth. Optionally, add spices for extra flavor.
- Drizzle the glaze over the warm scones and serve.
Notes
For best results, ensure your butter is very cold and do not overwork the dough to keep the scones light and fluffy.
