- 1 (.25 ounce) envelope active dry yeast
- ⅔ cup warm water (110 degrees F/45 degrees C)
- ¾ cup canned pumpkin
- ⅓ cup packed brown sugar
- 1 ½ teaspoons ground cinnamon
- 1 teaspoon salt
- ¾ teaspoon ground nutmeg
- ½ teaspoon ground allspice
- ½ teaspoon ground cloves
- 3 cups all-purpose flour

- 1 tablespoon cornmeal
- 6 cups water
- or more as needed
- 1 teaspoon white sugar

Instructions
- In a bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
- Mix in the pumpkin, brown sugar, cinnamon, salt, nutmeg, allspice, and cloves.
- Gradually add the flour until a dough forms. Knead on a floured surface for about 8-10 minutes.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
- Preheat the oven to 425 degrees F (220 degrees C) and bring 6 cups of water to a boil with 1 teaspoon of sugar.
- Punch down the dough, then divide it into 8 equal portions. Shape each portion into a bagel and poke a hole in the center.
- Boil the bagels for 1-2 minutes on each side, then place them on a baking sheet sprinkled with cornmeal.
- Bake the bagels for 20-25 minutes or until golden brown. Allow to cool before serving.
Notes
For added flavor, try sprinkling a mixture of cinnamon and sugar on top of the bagels before baking.
