Ingredients

  • 1 (.25 ounce) envelope active dry yeast
  • ⅔ cup warm water (110 degrees F/45 degrees C)
  • ¾ cup canned pumpkin
  • ⅓ cup packed brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon salt
  • ¾ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • 3 cups all-purpose flour
  • or more as needed
  • 1 tablespoon cornmeal
  • 6 cups water
  • or more as needed
  • 1 teaspoon white sugar
  • cooking spray

Instructions

  1. In a bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
  2. Mix in the pumpkin, brown sugar, cinnamon, salt, nutmeg, allspice, and cloves.
  3. Gradually add the flour until a dough forms. Knead on a floured surface for about 8-10 minutes.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 425 degrees F (220 degrees C) and bring 6 cups of water to a boil with 1 teaspoon of sugar.
  6. Punch down the dough, then divide it into 8 equal portions. Shape each portion into a bagel and poke a hole in the center.
  7. Boil the bagels for 1-2 minutes on each side, then place them on a baking sheet sprinkled with cornmeal.
  8. Bake the bagels for 20-25 minutes or until golden brown. Allow to cool before serving.

Notes

For added flavor, try sprinkling a mixture of cinnamon and sugar on top of the bagels before baking.
