Description

Ingredients

  • 8 TBSP unsalted butter
  • room temperature (1 stick)
  • ½ cup light brown sugar (100 grams)
  • ⅓ cup granulated sugar (100 grams)
  • 2 large eggs
  • 2 medium/large spotty extra ripe bananas
  • ½ cup canned pumpkin puree
  • 1 tsp ground cinnamon
  • ½ tsp pumpkin spice
  • 2 cups all-purpose flour (240 grams)
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup chopped walnuts
  • ¼ cup reserved for topping
  • optional cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs, ripe bananas, and pumpkin puree to the mixture, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, pumpkin spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts, reserving ¼ cup for topping.
  7. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the reserved walnuts on top, and if desired, add a sprinkle of cinnamon sugar.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, use extra ripe bananas for natural sweetness. These muffins can be stored in an airtight container for up to 3 days.
