- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 ½ Tablespoons Pumpkin Pie Spice
- 1 cup granulated sugar
- 1 cup dark brown sugar firmly packed
- 1 cup vegetable oil
- 3 cups canned pumpkin puree chilled
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups confectioners’ sugar
- ½ cup unsalted butter at room temperature
- 8 oz cream cheese at room temperature
- 3 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- Sprinkles or jimmies for garnish optional
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, salt, baking soda, baking powder, and pumpkin pie spice. Set aside.
- In another mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
- Add in the pumpkin puree, eggs, and vanilla extract to the sugar mixture, and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop rounded tablespoons of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 20-25 minutes, or until the cookies are set. Allow them to cool completely.
- For the filling, beat together cream cheese and butter until creamy. Gradually add in confectioners’ sugar, maple syrup, and vanilla extract, mixing until smooth.
- Once the cookies are cooled, spread the maple cream cheese filling on the flat side of one cookie and sandwich it with another cookie.
- If desired, garnish with sprinkles or jimmies.
Notes
For best results, chill the cream cheese filling before spreading to make it easier to work with.
