Description

Delight in the warm, spiced flavors of fall with these Pumpkin Whoopie Pies. Soft and cake-like pumpkin cookies sandwich a luscious maple cream cheese filling, perfect for any occasion.

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 ½ Tablespoons Pumpkin Pie Spice
  • 1 cup granulated sugar
  • 1 cup dark brown sugar firmly packed
  • 1 cup vegetable oil
  • 3 cups canned pumpkin puree chilled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups confectioners’ sugar
  • ½ cup unsalted butter at room temperature
  • 8 oz cream cheese at room temperature
  • 3 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Sprinkles or jimmies for garnish optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, salt, baking soda, baking powder, and pumpkin pie spice. Set aside.
  3. In another mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  4. Add in the pumpkin puree, eggs, and vanilla extract to the sugar mixture, and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop rounded tablespoons of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 20-25 minutes, or until the cookies are set. Allow them to cool completely.
  8. For the filling, beat together cream cheese and butter until creamy. Gradually add in confectioners’ sugar, maple syrup, and vanilla extract, mixing until smooth.
  9. Once the cookies are cooled, spread the maple cream cheese filling on the flat side of one cookie and sandwich it with another cookie.
  10. If desired, garnish with sprinkles or jimmies.

Notes

For best results, chill the cream cheese filling before spreading to make it easier to work with.
