- 3 Boneless Skinless Chicken Breasts diced
- 2 tablespoons Olive Oil
- ½ Yellow Onion diced
- 1 Red Bell Pepper cut into strips
- 1 Green Bell Pepper cut into strips
- 1 Orange Bell Pepper cut into strips
- 1 Packet Fajita Seasoning
- 2 cups Minute Rice
- 2 cups Chicken Broth
- 8 ounces Tomato Sauce
- Gordos Cheese Dip
Instructions
- In a large skillet, heat olive oil over medium heat and add the diced chicken breasts. Cook until no longer pink, about 7-10 minutes.
- Add the diced onion and bell peppers to the skillet, stirring occasionally until they are tender, about 5 minutes.
- Sprinkle the fajita seasoning over the chicken and vegetables, mixing well to coat.
- Stir in the Minute Rice, chicken broth, and tomato sauce. Bring to a simmer, cover, and cook for about 15-20 minutes until the rice is tender.
- Remove from heat and stir in the Gordos Cheese Dip until melted and well combined.
Notes
Feel free to customize the colors of bell peppers based on what you have. For a spicier kick, add sliced jalapeños.
