A flavorful and nutritious dish that combines the goodness of stuffed peppers with the savory taste of ground turkey, perfect for a quick weeknight meal.

- 4 large bell peppers
- Olive oil spray or 2 teaspoons olive oil
- Salt and pepper – to taste
- 1 tablespoon olive oil or avocado oil
- 1 lb lean ground turkey – I used 93/7
- 1 medium onion
- chopped – about 1 cup
- ½ tablespoon minced garlic
- 2 tablespoons taco seasoning
- 1 cup corn – Mexicorn or roasted corn are both great!
- 1 cup canned black beans – that have been drained and rinsed
- 2 cups tomato salsa – use homemade or store-bought
- 1 cup cooked brown rice – you could also use quinoa or white rice
- 1 cup shredded cheese – Mexican blend
- or sharp cheddar cheese
- 2 tablespoons chopped cilantro
- Sour cream or plain greek yogurt
- Limes
- Sliced avocado
- Salsa
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish.
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly spray or brush with olive oil, then season with salt and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
- Add the ground turkey to the skillet, cooking until browned and fully cooked. Stir in the taco seasoning, corn, black beans, salsa, and rice. Cook until everything is heated through.
- Stuff each bell pepper with the turkey mixture and place them upright in the baking dish. Top with shredded cheese.
- Cover the dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream, lime wedges, sliced avocado, and extra salsa on the side.
Notes
Feel free to customize the stuffing by adding your favorite vegetables or hot sauce for an extra kick.
