- 1 cup diced onion
- 1 tbsp red Thai curry paste (I use Thai Kitchen brand)
- 2 to 3 tsp chili oil
- 1 tbsp chopped cilantro (fresh)
- 1 tbsp sliced scallion greens
- 1 tbsp crunchy garlic
Instructions
- In a large pot, heat the avocado oil over medium heat.
- Add the diced onion, minced garlic, and chopped cremini mushrooms, sautéing until translucent.
- Stir in the red Thai curry paste, soy sauce, salt, and sugar, mixing well to amalgamate the flavors.
- Pour in the vegetable broth and coconut milk, bringing the mixture to a gentle simmer.
- Add the frozen vegan dumplings and let them cocook in the broth for about 10-15 minutes.
- Once the dumplings are heated through, adjust seasoning to taste.
- Serve hot, garnished with sliced scallion greens, crunchy garlic, chopped cilantro, and a drizzle of chili oil.
