- 1/2 cup extra virgin olive oil
Instructions
- In a food processor, combine the garlic scapes, roasted cashews, fresh basil, parmesan cheese, lemon juice, and kosher salt.
- Pulse until the mixture is finely chopped.
- While the food processor is running, slowly drizzle in the extra virgin olive oil until the pesto reaches your desired consistency.

Notes
If the ends of the garlic scapes are woody, make sure to trim those off before using. This pesto can be stored in an airtight container in the refrigerator for up to a week.
