Raspberry Filling

  • 10 oz frozen raspberries
  • ½ cup water
  • ½ cup granulated sugar
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 4 tablespoons cornstarch
  • ⅓ cup water (for slurry)

Instructions

  1. In a bowl, combine warm milk, yeast, and 1 teaspoon sugar. Let sit until foamy (5–10 minutes).
  2. In another bowl, cream butter and sugar until smooth. Add eggs one at a time.
  3. Mix in the yeast mixture. Gradually add flour and salt to form a soft dough.
  4. Knead for 5–7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled.

Prepare Filling:
6. In a saucepan, combine raspberries, water, and sugar. Bring to a boil.
7. Add lemon juice and zest. Stir in cornstarch slurry and cook until thickened. Cool completely.

Shape & Fry:
8. Roll out dough and cut into circles.
9. Add raspberry filling to center, seal edges היטightly, and shape into balls.
10. Heat oil to 350°F (175°C).
11. Fry donuts until golden brown (1–2 minutes per side).
12. Drain on paper towels and roll in sugar while warm.
