- 6 ounces fresh raspberries
- rinsed and drained
- ½ cup red wine vinegar
- ¼ cup grape juice
- or water
- ¼ cup extra virgin olive oil
- 1 teaspoon kosher salt
- ½ teaspoon onion powder
- ¼ teaspoon pepper
Instructions
- In a blender, combine raspberries, red wine vinegar, and grape juice or water.
- Blend until smooth, then strain the mixture through a fine mesh sieve to remove seeds if desired.
- Return the strained vinaigrette to the blender and add extra virgin olive oil, kosher salt, onion powder, and pepper.
- Blend again until all ingredients are well combined and emulsified.
- Taste and adjust seasoning if necessary. Serve immediately or refrigerate for up to a week.
Notes
For a sweeter vinaigrette, feel free to add a touch more grape juice. Shake or stir well before serving if the dressing separates.
