- 1 Medium Patty Pan Squash (cut into strips)
- 1 ½ Cups Diced Tomatoes
- ¼ Cup Fresh Chopped Parsley
- 1 Tsp Minced Garlic
- 1 Tsp Onion Powder
- ½ Tsp Black Pepper
Instructions
- Cook the red lentil spaghetti according to the package instructions, then drain and set aside.
- In a grill pan or skillet, heat a splash of olive oil over medium heat. Add the patty pan squash strips and grill until tender and slightly charred, about 5-7 minutes.
- In a large mixing bowl, combine the diced tomatoes, grilled patty pan squash, fresh parsley, minced garlic, onion powder, and black pepper. Toss to combine.
