This classic Reuben Sandwich recipe combines corned beef, Swiss cheese, and tangy sauerkraut, all grilled to perfection between slices of rye bread, complemented by a rich Russian dressing.

- 1/2 lb corned beef
- ½ tsp olive oil
- 6 slices rye bread
- 2 Tbsp unsalted butter
- 1/2 cup sauerkraut
- 6 slices Swiss cheese
- 1/4 cup mayonnaise
- 1 1/2 tsp chili garlic sauce
- 1/2 tsp lemon juice
- 1 ½ tsp creamy horseradish
- 1 garlic clove
- ½ tsp Worcestershire sauce
- 1/2 Tbsp onion
- ⅛ tsp paprika
- Salt and pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Spread butter on one side of each slice of rye bread.
- Lay 3 slices of bread, buttered side down, in the skillet.
- Layer corned beef, sauerkraut, Swiss cheese, and 3 slices of bread on top, buttered side up.
- Cook until golden brown, then carefully flip and grill the other side until cheese melts.
- In a small bowl, mix mayonnaise, chili garlic sauce, lemon juice, horseradish, garlic, Worcestershire sauce, onion, paprika, salt, and pepper to make the Russian dressing.
- Slice the sandwiches in half, serve with Russian dressing on the side.
Notes
For an extra punch of flavor, consider toasting the rye bread before grilling the sandwich. You can adjust the spiciness of the dressing based on your preference.
