  • 3/4 cup heavy cream

  • 1 teaspoon vanilla extract
  • 2 packages (8 oz each) cream cheese softened
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 48 Ritz crackers
  • 1/2 cup salted caramel sauce (plus more for drizzling)
  • Whipped cream (for garnish)

Instructions

  1. In a saucepan, combine 1 cup of granulated sugar and 1/4 cup of water over medium heat. Stir until the sugar dissolves.
  2. Increase the heat and allow the mixture to boil without stirring until it turns a deep amber color. This will take about 10-15 minutes.
  3. Remove from heat and carefully whisk in the heavy cream, butter, sea salt, and vanilla extract until smooth. Set aside to cool.
  4. In a mixing bowl, beat the softened cream cheese with the granulated sugar until smooth. Add the 1/2 cup of heavy cream and 1 teaspoon of vanilla extract, beating until fluffy.
  5. To assemble, spread a thin layer of the cream cheese mixture in a 9×13 inch dish. Layer 16 Ritz crackers over the mixture, then drizzle with a portion of the salted caramel sauce.
  6. Repeat the layers: cream cheese mixture, crackers, and caramel sauce until all ingredients are used, finishing with the cream cheese mixture on top.
  7. Refrigerate the cake for at least 4 hours, preferably overnight, to allow it to set.
  8. Before serving, top with whipped cream and drizzle with additional salted caramel sauce.

Notes

For best results, allow the cake to chill overnight. Feel free to adjust the amount of caramel sauce based on your preference for sweetness.
