- stems trimmed and halved
- 2 Tbsp. extra-virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 2 cloves garlic
- minced
- 1 tsp. chopped fresh thyme leaves
- Pinch crushed red pepper flakes
- 1 Tbsp. freshly chopped parsley
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- In a large bowl, toss the halved patty pan squash with the olive oil, garlic, thyme, crushed red pepper flakes, salt, and pepper.
- Spread the squash in a single layer on a baking sheet.
- Roast in the preheated oven for 30 minutes, or until the squash is tender and lightly browned, stirring halfway through.
- Remove from the oven and sprinkle with freshly chopped parsley before serving.
Notes
