- 2 firm pears
- halved and cored
- 4 ounces goat cheese
- 1/3 cup walnuts
- chopped
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine olive oil, lemon juice, salt, and pepper. Toss the pear halves in this mixture to coat.
- Place the pears cut-side up on a baking sheet lined with parchment paper. Bake for 20 minutes.
- While the pears are baking, toss the chopped walnuts with maple syrup and thyme.
- After 20 minutes, remove the pears from the oven and spoon the walnut mixture over them. Crumble goat cheese on top.
- Return to oven and bake for an additional 10 minutes, until the cheese is warm and slightly golden.
- Serve warm, drizzled with any remaining maple syrup and a sprinkle of fresh thyme.
Notes
For added flavor, you can substitute walnuts with pecans or hazelnuts. Ensure pears are firm to hold their shape during roasting.
