Ingredients

  • 1 cup cooked chickpeas (or canned
  • rinsed and drained)
  • 1/3 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons olive oil (for dressing)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and black pepper in a baking dish. Spread them out in a single layer.
  3. Roast the sweet potatoes for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  4. While the sweet potatoes are roasting, prepare the kale by washing, stemming, and chopping it into bite-sized pieces.
  5. In a large bowl, combine the chopped kale, cooked chickpeas, dried cranberries, and pumpkin seeds.
  6. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey or maple syrup, and minced garlic to make the dressing.
  7. Once the sweet potatoes are ready, let them cool slightly before adding them to the salad mixture.
  8. Drizzle the dressing over the salad and toss to combine. If desired, sprinkle with crumbled feta cheese before serving.
