- 1 tablespoon olive oil
- Kosher salt and ground black pepper

Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the yellow squash rounds with olive oil, Kosher salt, and ground black pepper until evenly coated.
- Spread the squash in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until tender and lightly browned.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Garnish with fresh herbs, if desired, and serve warm.
Notes
