Description

  • 1 lb. yellow summer squash (about 2 medium)
  • cut into ½-inch rounds
  • 1 tablespoon olive oil
  • Kosher salt and ground black pepper
  • to taste
  • 3 tablespoons grated Parmesan cheese
  • Optional garnish: chopped fresh herbs such as parsley
  • thyme
  • or basil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the yellow squash rounds with olive oil, Kosher salt, and ground black pepper until evenly coated.
  3. Spread the squash in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until tender and lightly browned.
  5. Remove from the oven and sprinkle with grated Parmesan cheese.
  6. Garnish with fresh herbs, if desired, and serve warm.
