Description

Delicious roasted zucchini with garlic is a perfect side dish that’s easy to prepare and bursting with flavor.


Ingredients

Scale
  • 1 pound zucchini
  • each cut in half across the middle
  • then each half quartered lengthwise
  • 1 teaspoon fresh minced garlic cloves
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon Herbes de Provence or dried thyme
  • or 1 teaspoon of fresh chopped thyme
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the zucchini, minced garlic, olive oil, kosher salt, Herbes de Provence (or thyme), and black pepper. Toss to coat.
  3. Spread the zucchini mixture on a baking sheet in a single layer.
  4. Roast in the oven for about 25-30 minutes, or until the zucchini is tender and slightly caramelized, stirring halfway through.
  5. Remove from the oven and serve warm.

Notes

For added flavor, consider sprinkling some grated Parmesan cheese on top just before serving.
