Delicious roasted zucchini with garlic is a perfect side dish that’s easy to prepare and bursting with flavor.
Ingredients

- 1 pound zucchini
- each cut in half across the middle
- then each half quartered lengthwise
- 1 teaspoon fresh minced garlic cloves
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon kosher salt
- 1/2 teaspoon Herbes de Provence or dried thyme
- or 1 teaspoon of fresh chopped thyme
- Freshly ground black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the zucchini, minced garlic, olive oil, kosher salt, Herbes de Provence (or thyme), and black pepper. Toss to coat.
- Spread the zucchini mixture on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, or until the zucchini is tender and slightly caramelized, stirring halfway through.
- Remove from the oven and serve warm.
Notes
For added flavor, consider sprinkling some grated Parmesan cheese on top just before serving.
