- 8 ounces (226g) cream cheese

- ½ cup sweetened shredded coconut

- ¼ cup caramel sauce
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 12 ounces semi-sweet chocolate
- chopped
- 1 tablespoon coconut oil or neutral vegetable oil
- ½ cup toasted shredded coconut
- ¼ cup caramel sauce
- 2 ounces melted dark chocolate
Instructions
- In a large bowl, mix the cookie crumbs, softened cream cheese, toasted shredded coconut, caramel sauce, vanilla extract, and salt until well combined.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes.
- Melt the semi-sweet chocolate with coconut oil in a heatproof bowl over simmering water or in the microwave, stirring until smooth.
- Dip each chilled truffle in the melted chocolate, ensuring they are fully coated, then return them to the baking sheet.
- While the chocolate is still wet, sprinkle with toasted shredded coconut and drizzle with caramel sauce and melted dark chocolate for decoration.
