- 4 medium sweet Italian sausage links (about ¾ lb)
- 1½ cups arborio rice
- 4 cups low-sodium chicken stock
- 4 tablespoons unsalted butter, divided
- 1 medium yellow onion, finely diced

- ½ cup white wine or vermouth
- 1 bunch garlic scapes, cut into ½-inch pieces
- 1 ounce parmesan cheese, finely shredded
- Freshly ground black pepper, to taste

Instructions
- Heat the chicken stock in a saucepan over low heat and keep warm throughout cooking.
- In a large skillet or heavy-bottomed pot, melt 2 tablespoons of butter over medium heat.
- Remove the sausage from its casings and crumble it into the pan. Cook until browned and fully cooked, about 6–8 minutes. Transfer to a plate and set aside.
- In the same pan, add the diced onion and kosher salt. Cook for 3–4 minutes until soft and translucent.
- Stir in the arborio rice and cook for 1–2 minutes, coating the grains with the flavorful butter and sausage drippings.
- Pour in the white wine or vermouth and stir continuously until absorbed.
- Add warm chicken stock one ladle at a time, stirring often. Allow each addition to absorb before adding more stock.
- Continue cooking for 18–20 minutes until the rice is creamy and tender but still slightly firm in the center.
- Meanwhile, sauté the garlic scapes in the remaining 2 tablespoons butter for 2–3 minutes until tender.
- Stir the cooked sausage, sautéed garlic scapes, and parmesan cheese into the risotto.
- Season with black pepper to taste and serve immediately with extra parmesan if desired.
