Sausage and Garlic Scape Risotto

  • Author: Eleanor

  • Yield: 4 servings 1x

Description

Sausage and Garlic Scape Risotto is a creamy, savory dish that combines the richness of Italian sausage with the fresh, mild flavor of garlic scapes, making it a perfect comfort meal.

Ingredients

Scale
  • 4 medium sweet Italian sausage links (about ¾ lb)
  • 1½ cups arborio rice
  • 4 cups low-sodium chicken stock
  • 4 tablespoons unsalted butter, divided
  • 1 medium yellow onion, finely diced
  • ½ teaspoon kosher salt
  • ½ cup white wine or vermouth
  • 1 bunch garlic scapes, cut into ½-inch pieces
  • 1 ounce parmesan cheese, finely shredded
  • Freshly ground black pepper, to taste
  • Optional garnish: extra parmesan and chopped parsley

Instructions

  1. Heat the chicken stock in a saucepan over low heat and keep warm throughout cooking.
  2. In a large skillet or heavy-bottomed pot, melt 2 tablespoons of butter over medium heat.
  3. Remove the sausage from its casings and crumble it into the pan. Cook until browned and fully cooked, about 6–8 minutes. Transfer to a plate and set aside.
  4. In the same pan, add the diced onion and kosher salt. Cook for 3–4 minutes until soft and translucent.
  5. Stir in the arborio rice and cook for 1–2 minutes, coating the grains with the flavorful butter and sausage drippings.
  6. Pour in the white wine or vermouth and stir continuously until absorbed.
  7. Add warm chicken stock one ladle at a time, stirring often. Allow each addition to absorb before adding more stock.
  8. Continue cooking for 18–20 minutes until the rice is creamy and tender but still slightly firm in the center.
  9. Meanwhile, sauté the garlic scapes in the remaining 2 tablespoons butter for 2–3 minutes until tender.
  10. Stir the cooked sausage, sautéed garlic scapes, and parmesan cheese into the risotto.
  11. Season with black pepper to taste and serve immediately with extra parmesan if desired.

Notes

  • Arborio rice is essential for achieving the creamy risotto texture.
  • Garlic scapes have a mild garlic flavor that becomes sweeter when cooked.
  • Stirring frequently helps release the starches that create a silky consistency.
  • For extra richness, finish with an additional tablespoon of butter before serving.
  • Leftovers can be reheated gently with a splash of broth or water.
