A warm and hearty Sausage and Gnocchi Soup that’s perfect for cozy evenings. This dish combines savory pork sausage, tender gnocchi, and fresh spinach in a flavorful broth.

- 1 tablespoon extra virgin olive oil
- 10 ounces ground pork sausage
- ¾ teaspoon dried fennel seeds
- crushed between your fingers
- ¼ teaspoon red pepper flakes
- ½ yellow onion

- 3 garlic cloves
- pressed or minced
- 2 cups chicken stock
- 2 cups water
- 1 15 ounce can diced tomatoes with their juice
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 16 ounce package gnocchi
- 2 cups fresh spinach
- Parmesan cheese

Instructions
- In a large pot, heat the olive oil over medium heat. Add the ground pork sausage, fennel seeds, and red pepper flakes. Cook until browned.
- Add the chopped onion and garlic to the pot. Sauté until the onion is translucent.
- Pour in the chicken stock and water, then add the diced tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer.
- Stir in the gnocchi and cook according to package instructions, usually about 3-5 minutes.
- Finally, add the fresh spinach and stir until wilted. Serve hot, topped with grated Parmesan cheese.
Notes
For an extra kick, increase the red pepper flakes. Fresh herbs can also be added for additional flavor.
