Instructions
- In a large pot, melt the butter over medium heat and add the Italian sausage. Cook until browned.
- Add the mirepoix and garlic, sautéing until the vegetables are tender.
- Stir in the baby gold potatoes, dried herbs, and flour, cooking for another minute.
- Pour in the chicken stock and bring to a boil. Reduce heat and simmer until potatoes are fork-tender.
- Stir in the milk and heavy cream, allowing the soup to heat through.
- Finally, mix in the cheddar cheese and sour cream, stirring until melted and creamy.
