Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini and salt, and let it sit for 10 minutes to draw out moisture.
- In another bowl, whisk together the flour, baking powder, baking soda, black pepper, oregano, and thyme.
- In a separate mixing bowl, beat the eggs and then add the vegetable oil and milk.
- Mix the dry ingredients into the egg mixture until just combined. Fold in the zucchini, garlic, Parmesan cheese, cheddar cheese, and parsley.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
