Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a food processor, blend the whole orange until smooth. Add eggs and sugar, then blend until well combined.
  3. In a mixing bowl, combine all-purpose flour and baking powder. Gradually add this to the orange mixture, mixing until just combined.
  4. Fold in softened butter and Greek yogurt until the batter is smooth. If using, add vanilla extract at this stage.
