Ingredients

Scale
  • 1 (3-pound) beef chuck roast, trimmed

  • ½ medium onion, diced

  • ½ cup dark brown sugar

  • ⅓ cup soy sauce

  • 10 cloves garlic, minced

  • 1 medium jalapeno pepper, diced (optional for an extra kick)

  • 1 (1-inch) piece of fresh ginger root, peeled and grated

  • 2 tablespoons seasoned rice vinegar

  • 1 tablespoon sesame oil

  • Salt and ground black pepper to taste

  • 16 (6-inch) corn tortillas (optional for serving)

Instructions

  • Trim the excess fat from the beef chuck roast and set aside.

  • In a mixing bowl, whisk together dark brown sugar, soy sauce, minced garlic, grated ginger, diced jalapeno (if using), rice vinegar, and sesame oil.

  • Season with salt and pepper, then place the beef roast in the slow cooker and pour the sauce over it.

  • Add diced onion and coat the beef with the sauce mixture. Cook on low for 7-8 hours until the beef is tender.

  • Shred the beef with forks and serve in warmed corn tortillas with your favorite toppings (e.g., fresh cilantro, green onions, lime, pickled vegetables).

Notes

  • For extra flavor, try adding kimchi or pickled vegetables as toppings.

  • Feel free to swap beef for chicken or tofu for a different variation.

  • This dish is great with a side of Asian-style slaw or garlic parmesan beef spaghetti.
