Ingredients
1 (3-pound) beef chuck roast, trimmed
½ medium onion, diced
½ cup dark brown sugar
⅓ cup soy sauce
10 cloves garlic, minced
1 medium jalapeno pepper, diced (optional for an extra kick)
1 (1-inch) piece of fresh ginger root, peeled and grated
2 tablespoons seasoned rice vinegar
1 tablespoon sesame oil
Salt and ground black pepper to taste
16 (6-inch) corn tortillas (optional for serving)
Instructions
Trim the excess fat from the beef chuck roast and set aside.
In a mixing bowl, whisk together dark brown sugar, soy sauce, minced garlic, grated ginger, diced jalapeno (if using), rice vinegar, and sesame oil.
Season with salt and pepper, then place the beef roast in the slow cooker and pour the sauce over it.
