Description

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 small zucchini
  • cut into thin half moon slices
  • salt and black pepper
  • to taste
  • 1 small yellow onion
  • finely diced
  • 1 pound small button mushrooms
  • cleaned and patted dry
  • 3 to 4 cloves garlic
  • minced
  • 2 teaspoons fresh chopped herbs
  • use what you have on hand
  • or use 1 teaspoon dried herbs (thyme and oregano are great in this dish)
  • ¼ cup vegetable broth
  • chopped fresh parsley
  • for garnish
  • grated parmesan
  • for garnish

Instructions

  1. In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter until melted and bubbling.
  2. Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
  3. Add the sliced zucchini and season with salt and black pepper; cook for about 5 minutes, stirring occasionally.
  4. Introduce the mushrooms to the skillet, and continue cooking for another 5-7 minutes until they are tender.
  5. Stir in the minced garlic and fresh herbs, cooking until fragrant, about 1 minute.
  6. Pour in the vegetable broth, cover, and let simmer for an additional 5 minutes.
  7. Remove from heat, stir in the remaining butter, and garnish with fresh parsley and grated parmesan before serving.
