- 1 tablespoon olive oil
- 3 tablespoons butter
- 2 small zucchini cut into thin half moon slices
- salt and black pepper to taste
- 1 small yellow onion finely diced
- 1 pound small button mushrooms cleaned and patted dry
- 3 to 4 cloves garlic minced
- 2 teaspoons fresh chopped herbs or 1 teaspoon dried herbs
- ¼ cup vegetable broth
- chopped fresh parsley for garnish
- grated parmesan for garnish
Instructions
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.
- Add the sliced zucchini, season with salt and black pepper, and sauté for about 3-4 minutes until slightly tender.
- Add the diced onion to the skillet and cook for an additional 2-3 minutes until all vegetables are softened.
- Stir in the cleaned mushrooms and cook until they release their juices, about 5-7 minutes.
- Add minced garlic and fresh herbs, cooking for another 1-2 minutes until fragrant.
- Pour in the vegetable broth and let everything simmer for about 5 minutes to combine the flavors.
- Finish the dish by stirring in the remaining butter until melted, and garnish with parsley and grated parmesan before serving.
