Instructions
- Pat the beef cubes dry with paper towels and season them with seasoned salt and black pepper.
- Heat the vegetable oil in a large heavy skillet over medium-high heat.
- Working in batches to avoid overcrowding, sear the beef for 2–3 minutes per side until browned on all sides.
- Transfer the browned beef to the slow cooker.
- Pour the beef broth and Worcestershire sauce into the slow cooker.
- Add the Italian seasoning, dried thyme, bay leaf, diced onion, and minced garlic.
- Stir gently to combine, making sure the beef is surrounded by the broth and seasonings.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is fork-tender.
- About 15–30 minutes before serving, whisk the cornstarch and cold water together in a small bowl until smooth.
- Stir the cornstarch slurry into the slow cooker.
- Cover and cook for another 10–15 minutes, or until the gravy has thickened.
- Remove the bay leaf and taste the gravy, adjusting the seasoning if needed.
- Garnish with fresh parsley, if desired, and serve hot over mashed potatoes, rice, or buttered egg noodles.

- Top sirloin, chuck, or stew beef can be used. Chuck generally produces a richer, more tender result, while sirloin is a leaner option.
- Searing the beef before slow cooking adds extra flavor and creates a richer gravy.
