  • cut into bite-sized cubes
  • 1 lb (450g) baby potatoes
  • halved or quartered if large
  • 4 tbsp unsalted butter
  • 6 cloves garlic
  • minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper
  • to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Brown the beef stew meat on all sides, then transfer to the slow cooker.
  2. In the same skillet, melt the butter and sauté the minced garlic until fragrant. Pour this mixture over the beef in the slow cooker.
  3. Add the halved baby potatoes, beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper to the slow cooker. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the potatoes are cooked through.
