- 2 lbs (900g) beef stew meat
- cut into bite-sized cubes
- 1 lb (450g) baby potatoes
- halved or quartered if large
- 4 tbsp unsalted butter
- 6 cloves garlic
- minced
- 1/2 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper
- to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Brown the beef stew meat on all sides, then transfer to the slow cooker.
- In the same skillet, melt the butter and sauté the minced garlic until fragrant. Pour this mixture over the beef in the slow cooker.
- Add the halved baby potatoes, beef broth, Worcestershire sauce, dried thyme, dried rosemary, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the potatoes are cooked through.
