Slow Cooker Garlic Parmesan Chicken Stew

Description

A creamy and comforting chicken stew made in the slow cooker, featuring tender chicken, hearty vegetables, and a rich garlic-parmesan cream sauce. Perfect for family dinners or meal prep.


Ingredients

  • 2 pounds boneless, skinless chicken breasts (cut into chunks)

  • 4 medium potatoes (peeled and diced)

  • 3 large carrots (peeled and sliced)

  • 2 celery stalks (chopped)

  • 1 medium onion (diced)

  • 5 cloves garlic (minced)

  • 4 cups low-sodium chicken broth

  • 1 cup heavy cream

  • ½ cup freshly grated parmesan cheese

  • 2 tablespoons unsalted butter

  • 3 tablespoons all-purpose flour

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • ½ teaspoon paprika (optional)

  • 2 cups fresh spinach (chopped, added at the end)


Instructions

  • Place potatoes, carrots, celery, and onion at the bottom of the slow cooker.

  • Add chicken on top. Sprinkle in garlic, thyme, parsley, salt, pepper, and paprika.

  • Pour chicken broth evenly over the mixture. Stir gently.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • About 30 minutes before done, melt butter in a saucepan. Whisk in flour to form a roux.

  • Slowly whisk in heavy cream. Stir in parmesan until smooth.

  • Pour cream mixture into the slow cooker. Mix well.

  • Cook for another 20–30 minutes until stew thickens.

  • Stir in spinach just before serving.

  • Taste and adjust seasoning. Serve hot.

Notes

  • For extra creaminess, add 4 oz cream cheese with the parmesan.

  • To lighten, substitute half-and-half for heavy cream.

  • Best served with crusty bread or over rice.
