Description
A creamy and comforting chicken stew made in the slow cooker, featuring tender chicken, hearty vegetables, and a rich garlic-parmesan cream sauce. Perfect for family dinners or meal prep.
Ingredients
2 pounds boneless, skinless chicken breasts (cut into chunks)
4 medium potatoes (peeled and diced)
3 large carrots (peeled and sliced)
2 celery stalks (chopped)
1 medium onion (diced)
5 cloves garlic (minced)
4 cups low-sodium chicken broth
1 cup heavy cream
½ cup freshly grated parmesan cheese
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon paprika (optional)
2 cups fresh spinach (chopped, added at the end)
Instructions
Place potatoes, carrots, celery, and onion at the bottom of the slow cooker.
Add chicken on top. Sprinkle in garlic, thyme, parsley, salt, pepper, and paprika.
Pour chicken broth evenly over the mixture. Stir gently.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
About 30 minutes before done, melt butter in a saucepan. Whisk in flour to form a roux.
Slowly whisk in heavy cream. Stir in parmesan until smooth.
Pour cream mixture into the slow cooker. Mix well.
Cook for another 20–30 minutes until stew thickens.
Stir in spinach just before serving.
Taste and adjust seasoning. Serve hot.
Notes
For extra creaminess, add 4 oz cream cheese with the parmesan.
To lighten, substitute half-and-half for heavy cream.
Best served with crusty bread or over rice.
