Ingredients

  • 2 pounds tomatillos
  • husked and rinsed
  • 1 medium yellow onion
  • peeled and quartered
  • 4 cloves garlic
  • peeled and smashed
  • 24 roasted hatch chiles or one fresh jalapeño
  • stemmed
  • ⅓ cup loosely packed cilantro leaves
  • 1 teaspoon kosher salt
  • 2 pounds pork sirloin roast
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • kosher salt and freshly ground black pepper

Instructions

  1. In a slow cooker, combine the tomatillos, onion, garlic, hatch chiles, cilantro, and kosher salt.
  2. Season the pork sirloin roast with kosher salt and freshly ground black pepper, then add it to the slow cooker.
  3. Drizzle the olive oil and melt the butter over the pork.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours until the pork is tender and easily shredded.
  5. Once cooked, shred the pork and mix it with the sauce before serving.

Notes

For a spicier dish, use fresh jalapeños or increase the number of hatch chiles. This dish can be served with tortillas or over rice.
