- 2 pounds tomatillos
- husked and rinsed
- 1 medium yellow onion
- peeled and quartered
- 4 cloves garlic
- peeled and smashed
- 2–4 roasted hatch chiles or one fresh jalapeño
- stemmed
- ⅓ cup loosely packed cilantro leaves
- 1 teaspoon kosher salt
- 2 pounds pork sirloin roast
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon butter
- kosher salt and freshly ground black pepper
Instructions
- In a slow cooker, combine the tomatillos, onion, garlic, hatch chiles, cilantro, and kosher salt.
- Season the pork sirloin roast with kosher salt and freshly ground black pepper, then add it to the slow cooker.
- Drizzle the olive oil and melt the butter over the pork.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until the pork is tender and easily shredded.
- Once cooked, shred the pork and mix it with the sauce before serving.
Notes
For a spicier dish, use fresh jalapeños or increase the number of hatch chiles. This dish can be served with tortillas or over rice.
