- 1 cup steel-cut oats
- 2 ½ cups water
- 1 ½ cups unsweetened almond milk
- 1 cup canned pumpkin or homemade pumpkin puree
- 3 Tablespoons maple syrup
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- chopped pecans
- maple syrup and almond milk for serving
Instructions
- Spray the slow cooker insert with cooking spray or coat it with butter or coconut oil.
- In the slow cooker, combine the steel-cut oats, water, almond milk, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt.
- Stir until well mixed.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the oats are tender and creamy.
- When ready to serve, give the oatmeal a good stir and serve warm with chopped pecans, additional maple syrup, and almond milk to taste.
Notes
For a creamier texture, adjust the amount of almond milk to your preference. You can also use other milk alternatives if desired.
