Ingredients

  • 1 cup steel-cut oats
  • 2 ½ cups water
  • 1 ½ cups unsweetened almond milk
  • 1 cup canned pumpkin or homemade pumpkin puree
  • 3 Tablespoons maple syrup
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • chopped pecans
  • maple syrup and almond milk for serving

Instructions

  1. Spray the slow cooker insert with cooking spray or coat it with butter or coconut oil.
  2. In the slow cooker, combine the steel-cut oats, water, almond milk, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt.
  3. Stir until well mixed.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the oats are tender and creamy.
  5. When ready to serve, give the oatmeal a good stir and serve warm with chopped pecans, additional maple syrup, and almond milk to taste.

Notes

For a creamier texture, adjust the amount of almond milk to your preference. You can also use other milk alternatives if desired.
