Description
A dream combination of two iconic desserts: classic, chewy chocolate chip cookies stuffed with a rich, tangy, and velvety cheesecake center. These hybrid cookies deliver a crispy, golden-brown edge with a soft, melty chocolate chip exterior and a surprise pocket of sweet cream cheese in every bite.
Ingredients
For the Cheesecake Filling:
4 oz (115g) cream cheese, softened
1/4 cup powdered sugar
1/2 tsp pure vanilla extract
1 tbsp sour cream (optional, for extra tanginess)
For the Cookie Dough:
1/2 cup (1 stick / 115g) unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg, room temperature
1 tsp pure vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup semi-sweet or dark chocolate chips
Instructions
Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and optional sour cream until completely smooth and creamy. Cover and place in the freezer for 15–20 minutes to firm up slightly.
Make the Cookie Dough: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar with an electric mixer for 2–3 minutes until light and fluffy. Beat in the egg and vanilla extract.
Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Slowly add to the wet mixture, stirring until just combined. Fold in the chocolate chips.
Assemble the Stuffed Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 1.5 tablespoons of cookie dough and flatten it into a disc on your hand or baking sheet. Place a generous teaspoon of chilled cheesecake filling in the center. Carefully fold the dough around the filling, pinching the seams tightly to seal it completely inside, then roll gently into a ball.
Bake: Arrange dough balls 2 inches apart on the prepared baking sheet. Bake for 10–12 minutes until the edges are lightly golden and the centers are set.
Cool: Allow the cookies to cool on the baking sheet for 10 minutes so the cheesecake center can set, then transfer to a wire rack to cool completely.
Notes
Seal Well: Ensure no cream cheese filling is exposed before baking to prevent the cheesecake center from leaking onto the pan.
Storage: Store in an airtight container in the refrigerator for up to 7 days due to the cream cheese filling. Serve chilled or bring to room temperature before enjoying.
Freezing: Stuffed unbaked dough balls can be frozen for up to 3 months. Bake straight from frozen, adding 1–2 minutes to the total baking time.
Gluten-Free Swap: Use a 1:1 gluten-free baking flour blend containing xanthan gum.
